Ingredients

  • 1 cup lemon juice (see note)
  • 3 tablespoons powdered gelatine
  • 1 cup white sugar
  • 3 cups water
  • 3/4 cup pink grapefruit juice

Method

  • Step 1
    Brush a 6cm deep, 22cm x 9cm loaf pan with oil.
  • Step 2
    Place lemon juice and gelatine into a small bowl. Whisk until well combined. Set aside for 5 minutes to soften.
  • Step 3
    Place sugar and water into a large saucepan over medium heat. Cook, stirring, for 3 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to low. Simmer for 3 minutes. Remove from heat. Add lemon juice mixture. Stir until gelatine has dissolved. Add grapefruit juice. Stir until well combined.
  • Step 4
    Carefully pour mixture into prepared loaf pan. Cover and refrigerate for 4 hours, or overnight, if time permits, until set.
  • Step 5
    Make syrup: Place sugar and water into a small saucepan over low heat. Cook, stirring, for 3 minutes, or until sugar has dissolved. Increase heat. Bring to the boil. Add mint leaves. Remove saucepan from heat and allow syrup to cool to room temperature. Use an electric mixer to blend mint and sugar syrup together.
  • Step 6
    To serve, dip base of loaf pan into a sinkful of warm water for 5 seconds. Turn out onto a serving platter. Serve drizzled with mint syrup.
