  • 375g block puff pastry
  • 200g goat’s fetta (or soft goat’s cheese)
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh thyme
  • 250g cherry tomatoes, halved
  • 40ml (2 tablespoons) olive oil
  • 1 teaspoon caster sugar
  • 1 egg, beaten
  • 3 tablespoons grated parmesan


  • Step 1
    Preheat oven to 180°C.
  • Step 2
    Roll out the pastry to a 25 x 30cm rectangle. Transfer to a baking tray lined with baking paper. Fold in the edges of the pastry to make a border, pinching the edges together. Prick the pastry base with a fork and refrigerate for 30 minutes.

    Mash the goat’s fetta with the herbs, then spread over the base. Place the tomatoes, cut-side up, over goat’s fetta. Drizzle with oil and sprinkle with sugar. Season with salt and pepper.
  • Step 4
    Brush the pastry edges with beaten egg and bake for 10 minutes. Sprinkle tomatoes with parmesan, then return to oven for a further 10-15 minutes.
