  • 1/2 small red onion, finely diced
  • 2 tablespoons red wine vinegar
  • 1 teaspoon caster sugar
  • 1 tablespoon extra virgin olive oil
  • 2 x 250g punnets cocktail truss tomatoes, halved
  • 1 tablespoon fresh oregano leaves


  • Step 1
    Place onion, vinegar, sugar and half the oil in a bowl. Season with salt and pepper. Set aside for 30 minutes to allow flavours to develop.
  • Step 2
    Meanwhile, preheat oven to 200C/180C fan-forced. Line a large baking tray with baking paper. Place tomato on tray, cut-side up. Drizzle with remaining oil. Season with salt and pepper. Roast for 12 to 15 minutes or until just softened and lightly caramelised.
  • Step 3
    Transfer tomato to a platter. Spoon over onion mixture. Sprinkle with oregano. Serve.
