  • 1/3 cup (75g) wild rice blend
  • Olive oil spray
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 250g premium mince
  • 8 large tomatoes
  • 1 teaspoon ground cinnamon
  • 2 tablespoons chopped fresh mint
  • Salt & freshly ground pepper
  • Mixed salad leaves, to serve


  • Step 1
    Cook the rice according to packet instructions. Spray a large frying pan with oil. Heat over a medium-high heat. Add the onion and garlic, and cook for 2 minutes until soft. Add the mince and cook for 3-4 minutes or until browned.
  • Step 2
    Preheat oven to 200°C. Cut a thin slice from the top of each tomato. Set aside. Use a teaspoon to remove the tomato flesh and juice. Place the tomato shells in a baking dish. Chop the tomato flesh. Discard the juice.
  • Step 3
    Stir the rice, chopped tomato, cinnamon and mint through the mince mixture. Season with salt and pepper. Spoon the mixture into the tomato shells. Replace the tops on each tomato. Spray with a little olive oil. Bake for 20 minutes. Serve with salad leaves.
