  • 400g chat (small coliban) potatoes, cut in half
  • 1/8 (about 300g) green cabbage, hard core removed, thickly sliced
  • 25g reduced-fat dairy spread (Devondale brand)
  • 1 tablespoon fresh thyme leaves
  • 3/4 teaspoon salt
  • 500g veal schnitzels, cut crossways into 2cm strips
  • 2 1/4 teaspoons ground paprika
  • 2 tablespoons olive oil
  • 1 medium brown onion, halved, finely chopped
  • 200g button mushrooms, sliced
  • 125g (1/2 cup) light sour cream


  • Step 1
    Cook potatoes in a saucepan of salted boiling water for 4 minutes. Add cabbage and cook for a further 3-4 minutes or until potatoes are tender. Drain. Return to pan with dairy spread, 2 teaspoons of thyme and 1/4 teaspoon of salt. Toss to combine.
  • Step 2
    Meanwhile, combine veal, paprika and remaining salt in a bowl. Heat oil in a non-stick frying pan over medium-high heat. Add onion and mushrooms and cook, stirring, for 6-7 minutes or until golden brown. Add veal and cook for 2 minutes or until just browned. Reduce heat to low. Add sour cream and cook for 1 minute or until heated through. Serve with chats and cabbage.
