  • 750ml (3 cups) water
  • 440g (2 cups) raw sugar
  • 2 tablespoons rosewater or 1 tablespoon rosewater essence
  • 1 seedless watermelon, halved, each half cut into 5cm-thick wedges, each wedge cut in half crossways, rind removed
  • 1 cup loosely packed fresh mint leaves
  • 1 tablespoon caster sugar
  • 520g (2 cups) Greek-style natural yoghurt


  • Step 1
    Combine the water and raw sugar in a saucepan over low heat. Cook, stirring, for 3 minutes or until sugar dissolves. Increase heat to high and gently boil for 5 minutes or until syrup thickens slightly. Remove from heat. Stir in the rosewater. Set aside for 5 minutes to cool slightly.
  • Step 2
    Place watermelon wedges in a glass bowl. Pour over warm syrup and set aside for 30 minutes to develop the flavours.
  • Step 3
    Place the mint and caster sugar in a mortar and pestle and gently pound until a smooth paste forms. Combine the mint mixture and yoghurt in a medium bowl.
  • Step 4
    Place watermelon wedges in serving bowls and drizzle with syrup. Top with a dollop of mint yoghurt to serve.
