  • 355g caster sugar
  • 4 egg yolks
  • 300ml thickened cream
  • 300g thick yoghurt
  • 1 cup (250ml) prepared lemon curd*
  • Pulp of 8 fresh passionfruit


  • Step 1
    Place 115g of sugar in a saucepan with 100ml water. Bring to the boil over high heat, then turn heat to low and simmer for 2-3 minutes. Allow to cool.
  • Step 2
    Place egg yolks in the bowl of an electric mixer and beat until pale. Slowly add cooled sugar syrup. In a separate bowl, whip cream until soft peaks form and fold in egg mixture, yoghurt and lemon curd. Spoon into 6 lightly greased dariole moulds*, and freeze for at least 4 hours, or until firm.
  • Step 3
    Place remaining sugar and 1 cup of water in a saucepan. Stir over low heat to dissolve sugar. Simmer for 5 minutes.
  • Step 4
    Pulse passionfruit pulp several times in a food processor to release pips from pulp. Add to sugar syrup, simmer for a further 2 minutes, then cool completely.
  • Step 5
    To serve, turn out parfaits and spoon over passionfruit syrup.
