  • 1/4 cup (75g) tandoori paste
  • 2 tablespoons Greek-style yoghurt
  • 1kg Coles Australian Lamb Butterflied Leg
  • 2 Lebanese cucumbers, thinly sliced into ribbons
  • 2 carrots, peeled, thinly sliced into ribbons
  • 1 long red chilli, seeded, thinly sliced
  • 1 cup coriander leaves
  • 1 tablespoon lemon juice
  • 2 teaspoons olive oil


  • Step 1
    Combine the tandoori paste and yoghurt in a large bowl. Add lamb and turn to coat. Cover with plastic wrap and place in the fridge for 6 hours to develop the flavours.

    Meanwhile, to make the spring onion naan, combine flour, yeast, sugar, salt, baking powder and bicarbonate of soda in a bowl. Whisk the water, milk and yoghurt in a jug. Add to flour mixture and stir to combine. Turn onto a lightly floured surface and knead for 5 mins or until smooth and elastic. Return to the bowl. Cover with plastic wrap and place in a warm, draught-free place for 1 hour or until dough doubles in size.
  • Step 3
    Preheat oven to 200C. Preheat a barbecue grill or chargrill on high. Cook the lamb for 5 mins each side. Transfer to a baking tray. Roast for 20 mins for medium or until cooked to your liking. Set aside to rest for 15 mins. Thinly slice.
  • Step 4
    Meanwhile, add spring onion to the dough and knead for 5 mins or until well incorporated. Divide into 6 portions. Roll each portion out on a lightly floured surface to a 12cm x 20cm oval. Preheat a barbecue grill or chargrill on high. Combine the melted butter and garlic in a small bowl. Brush 1 naan with garlic butter. Place, buttered-side down, on grill. Cook, brushing with more garlic butter, for 1 min. Turn and cook for a further 1 min or until golden brown and puffed. Repeat with remaining naan and butter mixture.
  • Step 5
    Toss the cucumber, carrot, chilli and coriander in a bowl. Drizzle with lemon juice and oil and toss to combine.

    Serve the lamb with the spring onion naan and salad.
