Ingredients

  • 1 tablespoon peanut oil
  • 1 brown onion, thinly sliced
  • 1 garlic clove, crushed
  • 400ml can coconut cream
  • 2 tablespoons Thai red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon grated palm sugar
  • 600g cauliflower, trimmed, cut into florets
  • 1 bunch snake beans, cut into 5cm lengths
  • 1/2 cup fresh coriander leaves, chopped
  • 1 long red chilli, thinly sliced

Method

  • Step 1
    Heat a wok over high heat. Add oil. Swirl to coat. Add onion. Stir-fry for 5 minutes or until onion has softened. Add garlic. Stir-fry for 1 minute.
  • Step 2
    Spoon thick top layer of coconut cream into wok. Add curry paste. Cook, stirring, for 3 minutes or until oil separates and rises to the top. Add fish sauce, lime juice, palm sugar and remaining coconut cream. Bring to the boil. Reduce heat to medium-low. Add cauliflower and beans. Simmer for 5 to 10 minutes or until vegetables are tender. Transfer to a dish. Sprinkle with coriander and chilli. Serve.
