  • 300g fresh ricotta
  • 2 eggs, lightly beaten
  • 2 tablespoons finely chopped fresh chives
  • 2 tablespoons finely chopped fresh basil
  • 1/4 cup finely grated parmesan cheese
  • 4 sheets filo pastry
  • Olive oil cooking spray
  • 1/2 cup semi-dried tomatoes, drained, halved


  • Step 1
    Place ricotta, eggs, chives, basil and parmesan in a bowl. Stir to combine. Season with salt and pepper.
  • Step 2
    Preheat oven to 180°C/160°C fan-forced. Grease three 12-hole, 11/2 tablespoon capacity patty pans. Place 1 sheet filo on a flat surface. Spray with oil. Top with 1 sheet filo. Repeat layering with 2 sheets filo. Cut filo stack in half crossways. Cut each half lengthways into 4 strips. Cut each strip into 4 to make a total of 32 squares. Line prepared holes with filo squares.
  • Step 3
    Spoon 1 tablespoon ricotta mixture into each case. Top each with 2 slices semi-dried tomatoes in a cross pattern. Spray lightly with oil. Bake for 25 minutes or until ricotta mixture is firm to touch. Remove from pan. Serve.
