  • 300ml thickened cream
  • 1/2 cup (125ml) milk
  • 2 garlic cloves, crushed
  • 500g washed potatoes, peeled, cut into 5mm-thick slices
  • 700g turnips, peeled, cut into 5mm-thick slices
  • 1 tablespoon thyme leaves
  • 1 cup (120g) grated cheddar
  • 2 teaspoons olive oil
  • 3 bacon rashers, rind removed, coarsely chopped
  • 3 kale stems, trimmed, coarsely chopped
  • Finely grated lemon rind, to serve
  • Coles Brand spinach & red beetroot leaves, to serve


  • Step 1
    Preheat oven to 200C. Grease a 6-cup (1.5L) baking dish.
  • Step 2
    Place the cream, milk and garlic in a large saucepan over medium heat. Bring to a simmer. Add the potato and turnip and cook, covered, for 8 mins or until almost tender. Stir in the thyme. Season. Transfer to the prepared baking dish. Sprinkle with cheddar. Bake for 25 mins until liquid reduces and top is golden.
  • Step 3
    Meanwhile, heat the oil in a large frying pan over medium-high heat. Add the bacon. Cook, stirring, for 5 mins until crispy. Add the kale. Cook, stirring, for 3 mins or until bright green. Season.
  • Step 4
    Top the gratin with the kale mixture and lemon rind. Serve with salad leaves.
