Ingredients

  • Olive oil cooking spray
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 x 420g cans red kidney beans, drained, rinsed
  • 1 cup water
  • 1/4 cup reduced-salt taco seasoning
  • 1/2 cup tomato salsa
  • 225g packet oven-baked corn chips
  • 1 cup grated low-fat cheddar cheese
  • 1/4 cup low-fat yoghurt
  • 1/4 cup low-fat sour cream
  • 1 tomato, diced
  • 2 green onions, finely sliced

Method

  • Step 1
    Heat a frying pan over medium heat. Spray with oil. Add onion and garlic. Cook, stirring, for 4 minutes. Add beans, water and seasoning. Bring to the boil. Reduce heat to low. Simmer for 10 minutes. Roughly mash. Stir through salsa.
  • Step 2
    Preheat oven to 200�C. Spoon mixture into a 4-cup capacity baking dish. Top with chips. Sprinkle with cheese. Bake for 10 minutes.
  • Step 3
    Top nachos with combined yoghurt and sour cream, tomato and onions. Serve.
