  • 300g penne rigate
  • 3 tablespoons olive oil
  • 1 red onion, thinly sliced
  • 150g Primo English Ham, cut into strips
  • 1 red capsicum, thinly sliced
  • 1 bunch asparagus, trimmed, peeled into ribbons
  • 2 tablespoons maple syrup
  • 1 clove garlic, crushed
  • 2-3 teaspoons balsamic vinegar
  • 8 baby bocconcini, torn


  • Step 1
    Cook the pasta in a large pan of boiling water according to packet directions until al dente. Drain and return to pan.

    Meanwhile, heat 1 tablespoon oil in a large non-stick frying pan over medium heat. Add onion and cook, stirring often for 1 minute. Add ham, and cook, stirring often for 2 minutes.
  • Step 3
    Add capsicum and cook for 1-2 minutes or until almost softened. Add asparagus and cook for 1 minute to partially wilt. Add vegetables to pasta and toss to combine. Whisk remaining oil, syrup, garlic and vinegar in a small bowl or jug and season with salt and pepper. Pour over pasta, add bocconcini and toss to combine. Serve.
