  • 300g Kent pumpkin, peeled, seeded, cut into 2cm pieces
  • 1 bunch baby carrots, trimmed, peeled
  • 1/2 red onion, peeled, cut into wedges
  • 1 tbs extra virgin olive oil
  • 400g can chickpeas, rinsed, drained
  • 2 garlic cloves, chopped
  • 1/2 cup fresh coriander leaves
  • 1 lemon, rind finely grated, juiced
  • 1-2 teaspoon harissa paste, to taste
  • 60g (1 cup) fresh breadcrumbs
  • 68g (1/4 cup) Wattle Valley Foodstore Delish Persian-style Fetta dip
  • 250g red cabbage, outer leaves removed, finely shredded
  • 50g finely shredded kale
  • 150g cooked beetroot, coarsely chopped
  • 1/3 cup pepitas, toasted


  • Step 1
    Preheat the oven to 180C/160C fan forced. Line a baking tray with baking paper. Arrange pumpkin, carrot and onion on the prepared tray. Drizzle with oil. Season. Roast for 30-35 minutes, until tender. Cool.
  • Step 2
    Place chickpeas, garlic, coriander, lemon rind, harissa, pumpkin and onion in a food processor. Pulse until the mixture is combined, but not a paste (there should still be texture). Season. Add breadcrumbs. Pulse to combine. Roll 2 tablespoonfuls of mixture into balls. Flatten slightly. Place on a lined baking tray or plate. Place in fridge for 10 minutes to chill.
  • Step 3
    Spray a frying pan with oil. Cook the falafel, in 3 batches, for 3 minutes each side or until they are golden and heated through.
  • Step 4
    Combine the dip, reserved lemon juice and 1 tbs warm water in a bowl. Place the cabbage and kale in a large bowl. Drizzle with half the dressing and toss to combine. Season. Transfer to a platter. Top with the carrots, falafel, beetroot, pepitas and remaining dressing.
