Ingredients

  • 1l chicken stock
  • 2 cups water
  • 40g Butter
  • 2 large zucchini, halved, sliced thinly
  • 1 clove garlic, crushed
  • 1 small brown onion, chopped finely
  • 400g arborio rice
  • 240g frozen peas, thawed
  • 25g coarsely grated parmesan
  • 1 tablespoon finely chopped mint or basil

Method

  • Step 1
    Bring stock and water to the boil in a medium saucepan. Reduce heat and simmer, covered.
  • Step 2
    Meanwhile, melt butter in a large saucepan over medium heat and cook zucchini and garlic, stirring, 5 minutes or until zucchini just softens. Remove from pan.
  • Step 3
    Cook onion in same pan, stirring, 5 minutes or until softened. Add rice and stir to coat in the onion mixture. Stir in 1 cup of the simmering stock mixture and cook, stirring, over low heat until liquid is absorbed by the rice. Continue adding stock mixture, in 1-cup batches, stirring, until liquid is absorbed after each addition. Total cooking time should be about 30 minutes or until rice is just tender.
  • Step 4
    Gently stir zucchini mixture and peas into risotto and cook until peas are tender. Remove from heat and stir in parmesan and mint.
