Ingredients

  • 2 teaspoons olive oil
  • 1 brown onion, halved, thinly sliced
  • 1 garlic clove, crushed
  • 3 zucchini, ends trimmed, halved lengthways, thinly sliced
  • 1 tablespoon ground cumin
  • 2 teaspoons sweet paprika
  • 300g (1 1/2 cups) Basmati rice
  • 500ml (2 cups) water
  • 1 Massel chicken style stock cube
  • 2 tablespoons coarsely chopped fresh continental parsley
  • 2 tablespoons fresh lemon juice
  • Chicken schnitzel, cooked, to serve

Method

  • Step 1
    Heat the oil in a medium saucepan over medium heat. Add the onion and garlic and cook, stirring, for 2 minutes or until onion softens. Add the zucchini, cumin and paprika and cook, stirring, for 1 minute or until aromatic. Add the rice and cook, stirring, for 1 minute or until coated in oil mixture.
  • Step 2
    Add the water and stock cube and bring to the boil. Reduce heat to low and cook, covered, for 15 minutes or until rice is tender. Remove from heat. Stir through the parsley and lemon juice. Serve immediately with crumbed chicken.
