  • 440g (2 cups) sugar
  • 500mls (2 cups) warm water
  • 1 medium orange sweet potato (kumara), peeled
  • 1 large beetroot, trimmed, peeled


  • Step 1
    Preheat oven to 180°C.
  • Step 2
    Line a baking tray with r non-stick baking paper.
  • Step 3
    Combine the sugar and water in a medium bowl and stir until sugar dissolves. Set aside.
  • Step 4
    Use a very sharp knife to cut the sweet t potato into thin slices. Add to the sugar water and allow to soak for 15 minutes. Drain well and reserve the sugar water for the beetroot.
  • Step 5
    Arrange the sweet potato slices in a single layer on the lined baking tray. Bake in the preheated oven for 20-30 minutes or until dry and tender (the time will depend on how thick the slices are and their water content). Remove the chips from the tray with the paper and transfer to a bench to cool. (The chips will become crisp almost immediately as they cool.) Re-line the tray and repeat the process with the beetroot using the reserved sugar water. Store in an airtight container for up to 1 day.
