  • 500g sweet potato, peeled, cut into 1.5cm chunks
  • Olive oil cooking spray
  • Salt & freshly ground pepper
  • 4 wholemeal or white pita pockets
  • 2/3 cup Raguletto Carb Options red wine and garlic pasta sauce
  • 400g can lentils, drained, rinsed
  • 80g goat’s cheese, crumbled
  • 40g fresh rocket leaves
  • Extra virgin olive oil, to drizzle
  • Balsamic vinegar, to drizzle


  • Step 1
    Preheat oven to 200°C. Place the sweet potato on a greased baking tray. Spray with oil. Season with salt and pepper. Bake, turning halfway through, for 40 minutes or until golden.
  • Step 2
    Place the pita pockets on greased baking tray. Spread the pasta sauce over the pita breads, leaving a 1-2cm border.
  • Step 3
    Scatter over the lentils, sweet potato and goat’s cheese. Bake for 20 minutes or until the base is crisp and golden. Top the pizzas with the rocket and drizzle with a little olive oil and balsamic vinegar to serve.
