Ingredients

  • 1200 g potatoes
  • 500 g lukewarm water
  • 1/2 tsp salt, plus extra to season
  • 3 spring onions/shallots
  • 4 red radishes
  • 1/2 continental cucumber, deseeded
  • 2 sprigs fresh coriander, leaves only
  • 150 g mayonnaise
  • 40 g rice wine vinegar
  • 1 tsp sesame oil
  • 20-30 g wasabi paste, to taste
  • 40 g lemon juice (approx. 1 lemon)
  • 1 nori sheet, finely sliced (optional)

Method

  • Step 1
    Place a bowl onto mixing bowl lid, weigh potatoes into it and set aside.
  • Step 2
    Place water into mixing bowl and heat 5 min/100C/speed 2. Meanwhile, peel and cut reserved potatoes into pieces (3 cm).
  • Step 3
    Place Varoma into position and place potatoes into it. Season with salt, secure Varoma lid and cook 18-20 min/Varoma/speed 4 or until potatoes are soft. Meanwhile, finely slice spring onions/shallots and radishes and place into a bowl. Cut cucumber into slices (5 mm) and add to bowl with radishes.
  • Step 4
    Add coriander to bowl with radishes, toss to combine and set aside. Remove Varoma and transfer potatoes into a large bowl. Rinse and dry mixing bowl.
  • Step 5
    Place mayonnaise, vinegar, oil, wasabi, lemon juice and salt into mixing bowl and mix 5 sec/speed 4. Transfer into bowl with potatoes and gently stir to combine. Transfer into a large serving bowl and top with reserved salad. Sprinkle with nori (optional) before serving warm.
