Ingredients

  • 1 1/2 cups self-raising flour, plus extra, for dusting
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon sea salt flakes
  • 200g plain Greek-style yoghurt
  • 1/4 cup extra virgin olive oil
  • 2 garlic cloves, crushed
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 1 tablespoon fresh rosemary leaves, finely chopped

Method

  • Step 1
    Place flour, baking powder and sea salt in a large bowl. Make a well. Add yoghurt. Mix to form a soft dough. Turn out onto a lightly floured surface. Knead for 1 minute or until smooth. Place dough in a lightly greased bowl.
  • Step 2
    Heat oil and garlic in a small frying pan over low heat. Cook for 20 seconds or until fragrant. Remove from heat. Stir in thyme and rosemary.
  • Step 3
    Turn dough onto a lightly floured surface. Divide into 8 equal portions. Using a rolling pin, roll each portion into a 2mm-thick, 12cm round. Brush rounds with about 3/4 of the herb oil. Leaving a 3cm border, cut 3 slits across the centre of each round.
  • Step 4
    Preheat a barbecue grill on high heat.
  • Step 5
    Grill rounds for 1 to 2 minutes each side or until golden, slightly charred and cooked through. Serve brushed with remaining herb oil.
