Ingredients

4 pink grapefruit

335g (1 1/2 cups) caster sugar

250ml (1 cup) water

1 teaspoon Angostura bitters

Thickened cream (optional), to serve
Method

Step 1Line a baking tray with non-stick baking paper. Use a vegetable peeler to peel the rind from 1 grapefruit. Use a small sharp knife to remove the white pith from the rind. Cut the rind into thin strips. Remove the rind and any white pith from the remaining grapefruit, and discard.

Step 2Combine the sugar and water in a medium saucepan and stir over low heat until the sugar dissolves. Add the strips of rind and bring to the boil over high heat.

Step 3Reduce heat to medium and boil, uncovered, without stirring, for 5 minutes. Use a fork to transfer the rind to the lined tray, spreading it out in a single layer. Set aside.

Step 4Boil the syrup, uncovered, brushing down the side of the pan occasionally with a wet pastry brush, for a further 5-10 minutes or until golden. Remove from the heat, stir in the bitters and set aside for 1 minute.

Step 5Place the grapefruit on heatproof serving plates. Pour the toffee evenly over the grapefruit and decorate with the candied rind. Set aside for 10 minutes or until the toffee begins to dissolve and serve with a dollop of cream on the side, if desired.
