  • 600g (3 cups) vanilla ice-cream, slightly softened
  • 21/2 teaspoons imitation rum essence (Queen brand)
  • 1 x 380g pkt (six slices) fresh pineapple slices
  • 140g (2/3 cup, firmly packed) brown sugar

    Combine ice-cream and rum essence in a metal bowl. Place in the freezer.

    Preheat grill on high. Place a wire rack over a baking tray. Cut 2 slices of pineapple in half through the centre. Place all slices in a single layer, on the rack. Sprinkle evenly with half the sugar. Cook under grill for 2-3 minutes or until sugar dissolves and pineapple browns. Turn and sprinkle with remaining sugar. Cook for a further 2-3 minutes or until sugar dissolves and pineapple browns. Remove from heat and set aside for 5 minutes to cool.

    Serve pineapple slices with a large scoop of rum ice-cream.
