  • 1 cup caster sugar
  • 1 cinnamon stick
  • 1 star anise
  • 1 vanilla pod, split and with the seeds scraped out
  • 5cm-piece fresh peeled ginger
  • 1 small honeydew melon, seeds removed and sliced
  • 1 small pineapple, peeled, halved, cored and sliced
  • 1 small rockmelon, seeds removed and sliced


  • Step 1
    Place caster sugar, cinnamon stick, star anise, vanilla pod and seeds, ginger and 2 cups water in a medium saucepan. Stir over low heat until the sugar has dissolved. Bring to the boil and simmer for 8 minutes. Set aside to cool. Strain and reserve the liquid. Discard the spices.
  • Step 2
    Meanwhile place honeydew, pineapple, and rockmelon in a large serving bowl. Pour over the syrup. Place in the fridge for 1 hour, stirring occasionally.

    To serve, divide among serving glasses.
