  • 250g packet microwave brown basmati rice
  • 1/2 telegraph cucumber, peeled, halved, sliced
  • 1/2 green capsicum, chopped
  • 1/2 red onion, chopped
  • 200g grape tomatoes, halved
  • 1/4 cup pitted kalamata olives
  • 400g can chickpeas, drained, rinsed
  • 2 x 185g cans tuna in springwater, drained
  • 1 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons olive oil
  • 8 slices crusty wholegrain bread


  • Step 1
    Cook rice following packet directions. Place cucumber, capsicum, onion, tomato and olives in a large bowl.
  • Step 2
    Add chickpeas, tuna, rice, lemon juice and oil. Toss to combine. Serve with bread.
