Ingredients

  • 1kg Coles frozen turkey thigh roast, thawed
  • 2 teaspoon Coles pure olive oil
  • 3 1/2 sheets Coles frozen puff pastry, thawed
  • 60g baby spinach leaves
  • 1 Coles free range egg, lightly beaten
  • 1/2 cup Coles cranberry sauce, to serve

Method

  • Step 1
    Preheat oven to 200C or 180C fan-forced, and line a large oven tray (or 2 smaller trays) with non-stick baking paper. Remove string and plastic from the turkey. Cut turkey roll in half lengthways, then lay cut-side down. Cut each half crossways into 3 pieces.
  • Step 2
    Heat oil in a non-stick frying pan and brown turkey pieces on both sides over medium-high heat, turning carefully to hold the shape. Cool.
  • Step 3
    Cut 3 puff pastry sheets in half. Lay spinach leaves in centre of the pastry, covering an area about the size of a piece of the turkey. Sit a piece of turkey lengthways on the spinach, and fold ends of pastry over.
  • Step 4
    Brush with a little beaten egg and overlap, pressing to seal. Fold open ends neatly and seal with a little beaten egg. Turn seam-side down and place on prepared tray. Gently press the joins to seal securely.
  • Step 5
    Repeat with remaining ingredients to make 6 parcels. Brush with egg. Use a small leaf-shaped cutter, or cut leaves freehand from the remaining piece of pastry, and use to decorate the parcels. Bake for 30 mins, or until golden brown. Stand for 5 mins before serving, with cranberry sauce.
