Ingredients

  • 4 medium desiree potatoes
  • 1 tablespoon olive oil
  • 3 Hans shortcut bacon rashers, rind removed, finely chopped
  • 1/4 cup sour cream
  • 1/3 cup grated cheddar
  • 2 green onions, thinly sliced

Method

  • Step 1
    Preheat oven to 180C/160C fan-forced. Place potatoes on a baking tray. Drizzle with oil and season. Bake for 1 hour or until tender, adding bacon to tray for the last 15 minutes of cooking time. Set aside to cool. Increase oven to 220C/200C fan-forced.
  • Step 2
    Cut potatoes in half lengthways. Scoop out centres, leaving 1cm-thick shells. Place potato flesh in a bowl and season. Mash with a fork. Stir in sour cream, half the cheese, bacon and onion. Spoon filling into potato shells. Sprinkle with remaining cheese and bacon.
  • Step 3
    Transfer potatoes to a wire rack placed over a baking paper lined baking tray. Bake for 15 to 20 minutes or until heated through. Sprinkle with remaining onion.
