  • 3 (500g) desiree potatoes

  • 1 cup (150g) sun-dried tomatoes, roughly chopped

  • Olive oil cooking spray
  • 2 small zucchini, thickly sliced diagonally
  • 1/4 cup extra virgin olive oil
  • 125g baby spinach
  • 170g jar marinated artichoke quarters, drained
  • 2 tablespoons balsamic vinegar

Method

  • Step 1
    Prick potatoes all over with a fork. Place potatoes on a large microwave-safe plate lined with paper towel. Cover with a piece of paper towel. Microwave on HIGH (100%) for 4 to 5 minutes or until almost tender.
  • Step 2
    Meanwhile, place veal on a flat surface. Spread pesto over one half of each piece of veal. Top with tomato. Sprinkle each with 1 tablespoon of the parmesan. Fold veal over to enclose filling. Secure with a toothpick. Season with salt and pepper.

    Spray a barbecue hotplate or grill with oil. Heat on medium-high heat. Cut potatoes into thick slices. Place in a bowl with zucchini. Add 1/2 the oil. Toss to coat. Season with salt and pepper. Cook potato and zucchini for 3 to 4 minutes each side or until browned and tender. Transfer to a large heatproof bowl. Cover to keep warm.
  • Step 4
    Cook veal schnitzels for 2 to 3 minutes each side for medium or until cooked to your liking. Transfer to a plate. Remove and discard toothpicks.

    Meanwhile, add spinach, remaining parmesan and artichoke to potato mixture. Drizzle with vinegar and remaining oil. Season with salt and pepper. Toss to combine. Serve veal parcels with salad
