Ingredients

  • 2 medium Granny Smith apples, washed, dried
  • 2 medium red apples (like lady williams or red delicious) washed, dried
  • 3 celery sticks, washed, finely sliced
  • 80g (1/2 cup) walnut pieces (Naturally Yours brand), halved
  • 2 tablespoons whole egg mayonnaise (S & W brand)
  • 2 tablespoons fresh lemon juice
  • Salt & ground black pepper, to taste
  • 8 butter lettuce leaves, washed, dried

Method

  • Step 1
    Cut the apples into quarters and core. Cut each quarter into bite-sized pieces. Place the apples, celery, walnuts, mayonnaise and lemon juice in a medium bowl. Season with salt and pepper and mix to combine.
  • Step 2
    Place 2 lettuce leaves onto each serving plate and spoon the salad over the lettuce. Serve immediately.
