  • 25g butter
  • 1/4 cup brown sugar
  • 1/4 cup thickened cream
  • 410g can pear slices in juice, drained
  • 1/2 x 515g ginger loaf, cut into 3cm squares
  • 1 cup extra-thick vanilla custard

  • Step 1
    Place butter, sugar and cream in a small frying pan over medium heat. Cook, stirring, for 2 to 3 minutes or until melted and smooth. Bring to the boil. Boil for 2 minutes or until slightly thickened. Add pears. Stir gently to coat. Boil for a further 2 minutes or until pears are heated through.

    Divide 1/2 the ginger loaf between four 1 1/2-cup-capacity glasses. Top with 1/2 the custard and 1/2 the caramel pear mixture. Repeat layers. Serve sprinkled with coconut.
