  • 1kg baby coliban potatoes, quartered
  • 1 tablespoon olive oil
  • Salt & freshly ground pepper
  • Olive oil spray
  • 3 chorizo, sliced crossways (see note)
  • 1/2 cup (80g) pitted Kalamata olives
  • 1/2 cup (110g) semi-dried tomatoes, halved
  • 1 cup fresh continental parsley leaves


  • Step 1
    Preheat oven to 200�C. Line a baking tray with non-stick baking paper. Place the potatoes and oil in a bowl. Season with salt and pepper. Toss to coat. Arrange in a single layer on the tray. Roast for 45 minutes or until golden. Transfer to a large bowl.
  • Step 2
    Meanwhile, to make the dressing, whisk all the dressing ingredients together in a bowl. Season with salt and pepper.
  • Step 3
    Spray a large frying pan with olive oil. Heat over a medium-high heat. Add the chorizo and cook for 2 minutes each side or until golden.
  • Step 4
    Add the chorizo, pitted olives, semi-dried tomatoes, parsley and dressing to the potatoes. Toss gently and serve immediately.
