  • 400g pkt plain madeira cake
  • 200g white chocolate, finely chopped
  • 3 x 250g pkts cream cheese, at room temperature
  • 100g (1/2 cup) caster sugar
  • 250ml (1 cup) thickened cream
  • 3 teaspoons vanilla essence
  • 3 eggs


  • Step 1
    Grease a 6.5cm deep, 12 x 27cm (base measurement) straight-sided loaf pan. Line the base and sides with baking paper.
  • Step 2
    Lightly trim the dark crust off the cake. Cut the cake horizontally into three 2cm-thick slices. Line the base of the prepared pan with the cake, cutting the pieces to fit.

    Preheat oven to 160C/140C fan forced. Melt the white chocolate in a small heatproof bowl in the microwave on Medium, stirring every 30 seconds, until chocolate melts. Set aside for 10 minutes to cool slightly.

    Process the cream cheese and sugar in a food processor until smooth. Add the cream and vanilla and process until well combined. Add the melted white chocolate and process until well combined. Add the eggs and process until combined.

    Pour into the prepared pan. Bake for 1 hour or until the cheesecake is just set in the centre (the ends of the cheesecake may rise slightly, these will deflate on cooling to even out slightly). Turn oven off. Leave the cheesecake in the oven, with the door ajar, for 2 hours or until cooled completely. Cover with plastic wrap and place in the fridge for 4 hours to chill.
  • Step 6
    Meanwhile, reduce the oven to 150C/130C fan forced. Use a small sharp knife to cut the rhubarb into 12.5cm lengths. Place in a roasting pan. Sprinkle with sugar and water and add the star anise to the pan. Bake for 30 minutes or until rhubarb is tender. Set aside to cool to room temperature.
  • Step 7
    Remove the cheesecake from the pan. Top with the rhubarb and star anise. Drizzle with any remaining syrup.
