Ingredients

  • Olive oil, for greasing
  • 1 sheet (25 x 25cm) ready-rolled Butter Puff Pastry (Pampas brand)
  • 1 1/2 tablespoons olive oil
  • 2 medium vine-ripened tomatoes, cut into 5mm-thick slices
  • 1 250g carton Eggplant Dip (Chris’ Home Style Greek Dips brand)
  • 1 green shallot, trimmed, thinly sliced
  • Salt & ground black pepper, to taste

Method

  • Step 1
    Preheat oven to 230°C. Brush a baking tray with olive oil to lightly grease. Place the pastry sheet onto a bench and leave to defrost for 2-3 minutes. Cut the pastry sheet into 4 equal squares and place on the greased baking tray.
  • Step 2
    Lightly brush the pastry squares with a little of the olive oil. Bake in preheated oven for 8 minutes or until puffed and golden.
  • Step 3
    Transfer pastry squares to a board and use an egg slice to press each down to flatten. To serve, top each pastry with the tomatoes, eggplant dip and green shallot. Drizzle pastries with any remaining olive oil and season with salt and pepper.
