  • 1 tablespoon extra virgin olive oil
  • 1 brown onion, chopped
  • 1 sebago potato, peeled, cut into 1cm pieces
  • 1 carrot, cut into 1cm pieces
  • 1 zucchini, quartered lengthways, sliced
  • 2 garlic cloves, crushed
  • 600g beef mince
  • 2 tablespoons instant gravy powder
  • 2 tablespoons Worcestershire sauce
  • 400g can diced tomatoes
  • 2 teaspoons chopped fresh rosemary leaves
  • 2 tablespoons chopped fresh flat-leaf parsley leaves, plus extra to serve
  • Olive oil cooking spray
  • 1/2 cup grated cheddar


  • Step 1
    Heat oil in a large frying pan over medium-high heat. Add onion, potato, carrot and zucchini. Cook, stirring, for 5 minutes or until onion softens. Add garlic. Cook for 1 minute or until fragrant. Add mince. Cook, breaking up mince with a wooden spoon, for 5 minutes or until browned.

    Add gravy powder and Worcestershire sauce. Stir to combine. Add tomatoes and rosemary. Season with pepper. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 10 minutes. Stir in parsley.

    Preheat oven to 200C/180C fan-forced.

    Make damper. Place flour in a bowl. Make a well. Add butter, milk and onion. Season with salt and pepper. Mix well to combine. Turn dough onto a floured flat surface. Press dough out to form a 23cm round.
  • Step 5
    Spoon mince mixture into a 6cm-deep, 22cm round cake pan. Top with damper, tucking in edges. Spray with oil. Sprinkle with cheddar. Bake for 20 to 25 minutes or until damper is golden brown and firm to touch. Stand for 5 minutes. Spoon, damper-side down, onto serving plates. Sprinkle with extra parsley. Serve.
