  • 4 cups (800g) cooked brown lentils
  • 1 tablespoon olive oil
  • 1 red onion, finely diced
  • 2 garlic cloves, chopped
  • 1 carrot, peeled, finely diced
  • 1 cup fresh continental parsley leaves, roughly chopped
  • 1/4 cup (60ml) balsamic vinegar
  • 80g pkt baby rocket
  • 200g low fat fresh ricotta
  • 250g pkt peeled and cooked beetroot, drained, sliced
  • Freshly ground pepper

Method

  • Step 1
    Place the lentils in a large salad bowl. Heat the oil in a frying pan over a medium heat. Add the onion and garlic and cook for 2 minutes or until soft. Add the carrot and cook for another 3 minutes or until just soft. Remove from the heat and add the parsley and balsamic vinegar. Add the cooked onion mixture to the lentils and toss to combine.
  • Step 2
    Fold through the rocket leaves. Divide the lentil salad among serving plates. Crumble with the ricotta and top with the sliced beetroot. Season with black pepper and serve.
