  • 50g dried rice vermicelli noodles
  • 1 teaspoon peanut oil
  • 2cm piece fresh ginger, finely grated
  • 2 green onions, thinly sliced
  • 1/4 cup finely chopped sliced water chestnuts
  • 185g can tuna in springwater, drained
  • 2 teaspoons hoisin sauce
  • 2 teaspoons oyster sauce
  • 4 small iceberg lettuce leaves

  • Step 1
    Place noodles in a heatproof bowl. Cover with boiling water. Stand for 4 to 5 minutes or until tender. Using a fork, separate noodles. Drain.

    Heat oil in a frying pan over high heat. Add ginger and onion. Cook for 1 minute. Add noodles, water chestnuts, tuna, hoisin sauce and oyster sauce. Cook for 2 to 3 minutes or until heated through. Spoon mixture into lettuce. Top with onion. Serve.
