  • 16 (about 160g each) veal T-bones, excess fat trimmed
  • 160ml (2/3 cup) extra virgin olive oil
  • 160ml (2/3 cup) dry white wine
  • 1/2 bunch fresh thyme sprigs
  • 3 garlic cloves, thinly sliced
  • 8 fresh bay leaves, roughly torn
  • Salt & freshly ground black pepper


  • Step 1
    Place veal in a large glass or ceramic dish. Combine oil, wine, thyme, garlic and bay leaves in a jug and season with salt and pepper. Pour over the veal. Cover with plastic wrap and place in the fridge for 6 hours or overnight to marinate.
  • Step 2
    Preheat barbecue grill on high. Remove veal from marinade. Discard marinade. Cook veal on preheated barbecue grill for 5-6 minutes each side for medium or until cooked to your liking. Serve immediately.
