1 small brown onion, finely diced

1 teaspoon cumin

1 teaspoon chilli flakes

2 cloves garlic, crushed

1/2 tablespoon fresh thyme

1 can cannellini beans

2 tablespoons tomato paste

1 can diced roma tomatoes

3 tablespoons brown sugar

2 tablespoons cider vinegar

200ml water

8 eggs

Olive oil

Sea salt and pepper
Method

Step 1Heat oil in a pan over medium-high heat. Add diced onions, cumin, thyme and chilli flakes. Stir until onions are translucent.

Step 2Add garlic, stir for 1 minute. Season with salt and pepper. Add canned beans and tomatoes. Add tomato paste, sugar and vinegar and stir to combine. Add water and reduce to low heat and simmer for 30 mins.

Step 3Heat oven to 180C.

Step 4Dived mixture evenly between pots. Crack 2 eggs into each pot. Season with pepper and salt flakes, add a few springs of thyme.

Step 5Bake in the oven for 10-15 minutes, depending on how you like your eggs. Once cooked drizzle with olive oil and serve with crusty bread.
