  • 250g fresh sweet potato noodles
  • 3 eggs, lightly beaten
  • 1 garlic clove, crushed
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons finely chopped fresh coriander, plus extra sprigs to serve
  • 1/2 cup plain flour
  • 2 tablespoons chilled sparkling mineral water
  • 1/4 cup vegetable oil
  • Chopped avocado, to serve
  • Lemon wedges, to serve

    Break up noodles slightly. Whisk eggs, garlic, cumin, cinnamon, coriander, flour and mineral water in a large bowl. Season with salt and pepper. Add noodles. Stir gently to combine.

    Heat oil in large frying pan over medium heat. Spoon 2 tablespoons of egg mixture into pan. Repeat 5 times. Cook for 2 to 3 minutes each side or until golden and cooked through. Transfer to a tray lined with paper towel. Repeat with remaining noodle mixture.
  • Step 3
    Garnish fritters with extra coriander. Serve with avocado, lemon wedges and dip.
