Ingredients

  • 1 x 1.3kg Coles RSPCA approved whole chicken small
  • 2 tablespoons Thai green curry paste
  • Olive oil, or peanut oil, to brush
  • 180g dried rice vermicelli noodles
  • 2 cups shredded wombok (Chinese cabbage)
  • 2 carrots, cut into matchsticks
  • 1/2 cup fresh mint leaves, large leaves torn in half
  • 1/2 cup fresh coriander sprigs
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1/3 cup roasted cashews, chopped

Method

  • Step 1
    Use poultry shears to cut either side of the chicken backbone and discard the backbone. Press the chicken to open flat. Spread the curry paste over the skin side of the chicken.
  • Step 2
    Preheat the barbecue plate of a hooded barbecue on medium. Brush lightly with a little oil. Cook the chicken, skin-side down, for 5 minutes. Turn and cook for a further 5 minutes. Close the lid and cook for a further 30-40 minutes or until the juices run clear when the thickest part of the chicken is pierced with a skewer. Cut the chicken into pieces.
  • Step 3
    Meanwhile, cook the noodles following packet directions. Drain and place in a large bowl. Set aside to cool slightly. Add the cabbage, carrot, mint and coriander. Combine the juice, fish sauce and sugar in a small bowl. Add to the noodle mixture and mix until well combined.
  • Step 4
    Divide the chicken and noodle salad among serving plates. Sprinkle the noodles with the cashews.
