Ingredients

  • 1 small whole kent pumpkin
  • 1 tablespoon Coles pure olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoon sage leaves,torn
  • 3/4 cup cooked rice
  • 1 cup chicken stock
  • 1 cup cooked turkey, chopped
  • 1 1/2 cups frozen peas
  • 1/4 cup pine nuts
  • 1 long red chilli, chopped

Method

  • Step 1
    Preheat oven to 220C or 200C fan. Cut top off pumpkin and reserve. Scoop out pumpkin seeds and discard. Scoop out a little extra pumpkin flesh (to make the hollow larger) and roughly chop.
  • Step 2
    Heat oil in a large frying pan on medium. Cook chopped pumpkin, onion and garlic for 5 mins, stirring occasionally, or until pumpkin has softened. Add sage and cook for 1 min. Add rice and stock and bring to the boil. Remove from heat and stir through turkey, peas, pine nuts and chilli.
  • Step 3
    Lay a large sheet of foil on a baking tray. Sit pumpkin on top and fill with rice mixture. Top with pumpkin lid and wrap in foil to enclose. Bake for 1 hour, or until pumpkin is very tender. Cut pumpkin into thick wedges (4) and serve.
