  • 2 tablespoons olive oil
  • 4 large brown onions, peeled, thinly sliced
  • 2 tablespoons brown sugar
  • 2 tablespoons malt vinegar
  • 4 cups Massel salt reduced chicken style liquid stock
  • 1 cup polenta
  • 4 large veal cutlets
  • Olive oil cooking spray

    Meanwhile, bring stock to the boil in a saucepan over medium-high heat. Add polenta. Reduce heat to medium. Cook, stirring, for 10 minutes or until thick and smooth. Remove from heat. Cover to keep warm.

    Preheat a barbecue plate or frying pan on medium-high heat. Spray both sides of veal with oil. Cook for 3 minutes each side or until just cooked through. Spoon polenta onto serving plates. Top with veal. Serve with onion marmalade.
