  • 500g strong plain flour
  • 4 egg yolks
  • 2 eggs
  • 1 teaspoon salt


  • Step 1
    To make pasta, combine flour, egg yolks, eggs and salt. Knead well and roll through a pasta machine. Cut pasta into 12.5cm squares. Cook in boiling salted water a few at a time. Drain on linen cloths.
  • Step 2
    Soak mushrooms in boiling water to cover for 15 mins until soft. Drain and chop. Lightly saute in olive oil for 2 minutes
  • Step 3
    For the sauce, melt 50g of the butter, add flour and blend well. Gradually whisk in milk until smooth. Add mushrooms to sauce with prosciutto, cream and parsley. Season, bring to the boil and stir until thickened.
  • Step 4
    Grease an ovenproof dish and cover the base with a layer of pasta. Spoon over a layer of sauce, dot with extra butter and sprinkle with parmesan cheese. Continue layering, finishing with pasta, butter and cheese. Cook for 20 mins until golden. Serve with truffle oil and a little parmesan cheese.
