Ingredients

  • 250g skinless chicken tenderloins, trimmed, chopped
  • 250g skinless chicken thigh fillet, trimmed, chopped
  • 1 teaspoon finely grated fresh turmeric
  • 1 teaspoon finely grated fresh ginger
  • 1 egg
  • 1/3 cup fresh coriander leaves, chopped, plus extra, to serve
  • 1/2 teaspoon chopped long fresh red chilli
  • 55g (1/3 cup) mixed or white sesame seeds, to coat
  • 2 tablespoons olive oil or coconut oil
  • 70g (1/4 cup) reduced-fat Greek-style yoghurt
  • 1 tablespoon fresh lime juice
  • 1 teaspoon harissa
  • 2 handfuls baby spinach leaves, to serve
  • 4 small multigrain sourdough rolls, halved, toasted
  • 1 purple carrot, peeled, finely shredded
  • 2 green shallots, trimmed, thinly sliced
  • Thinly sliced long fresh red chilli, extra, to serve (optional)
  • 1 avocado, sliced

Method

  • Step 1
    Place the chicken tenderloin and thigh, turmeric, ginger, egg, coriander and chilli in a food processor. Process until the chicken is minced and mixture is combined. Use clean hands to shape the mixture into four 2.5cm-thick patties. Place sesame seeds on a plate. Roll patties in seeds and turn to lightly coat.
  • Step 2
    Heat the olive or coconut oil in a frying pan over medium heat. Cook the patties, turning, for 3-4 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel.
  • Step 3
    Combine yoghurt, lime juice and harissa in a small bowl. Divide spinach among bases of rolls. Top with the carrot, shallot, extra chilli (if using), avocado, extra coriander and finish with a chicken patty. Drizzle with the yoghurt dressing and top with the tops of the rolls.
