Ingredients

  • 2 small sweet potatoes
  • 2 eggs
  • 100g baby spinach leaves
  • 3 1/2 sheets puff pastry, thawed
  • 1 teaspoon fresh chives, chopped
  • 250g feta (or other cheese)
  • 1 teaspoon mixed spice
  • 1 teaspoon paprika
  • 2 teaspoons crushed garlic

Method

  • Step 1
    Preheat conventional oven to 180C. Peel and cut sweet potato, slicing them into 1cm thick slices. Place in a large saucepan of boiling water and cook for 15 minutes or until tender
  • Step 2
    Once the sweet potato is tender, add the baby spinach for 2 minutes or until wilted. Drain all of it.
  • Step 3
    Place sweet potato, spinach, feta and 1 egg in a medium sized mixing bowl and mash with a fork until mixture is mostly smooth. Add spices, chives, garlic (and any other cheeses) and mix through evenly. (Add any salt if desired).
  • Step 4
    Cut puff pastry into quarters (squares). Dollop approx 1.5 fork fulls of the mixture into the center of each square. Beat another egg and wipe the edges of the puff pastry with it, before pinching said edges together to seal.
  • Step 5
    Line a large baking tray with baking paper. Wipe some more of the egg onto the outsides of the turnovers before placing them on the tray.
  • Step 6
    Repeat steps 4 and 5 until sweet potato mixture has been used up.
  • Step 7
    Place trays of uncooked turnovers into oven for approx 15 minutes, or until golden.
