Ingredients

  • 400g lean beef rump fillet steaks, trimmed
  • 2 limes
  • 3cm piece fresh ginger, peeled, finely grated
  • 1 stem lemongrass, white part only, finely chopped
  • 2 garlic cloves, crushed
  • 1 small red chilli, deseeded, finely chopped
  • 2 teaspoons olive oil

Method

  • Step 1
    Slice beef across the grain into thin strips. Juice 1 lime and cut the other into wedges. Combine 2 tablespoons lime juice, ginger, lemongrass, garlic, chilli and oil in a shallow ceramic dish. Add beef and turn to coat. Refrigerate for 20 minutes, if time permits.

    Thread beef strips onto skewers. Preheat a barbecue grill on medium-high heat.
  • Step 3
    Make coriander rice: Cook rice in a large saucepan of boiling water for 10 to 12 minutes or until tender. Drain and return to saucepan. Add capsicum, green onions, coriander and beansprouts. Toss to combine. Cover and set aside.
  • Step 4
    Barbecue skewers, turning and basting with marinade, for 2 minutes for medium or until cooked to your liking. Serve with coriander rice and lime wedges.
