  • 2 x 600g single turkey breast fillets, skin removed
  • 250ml (1 cup) dry white wine
  • 1 teaspoon black peppercorns
  • 2 bouquet garni (MasterFoods brand)
  • 750ml (3 cups) cold water (approximately)
  • 1 small bunch (about 250g) watercress, sprigs picked, washed, dried
  • 375g (1 1/2 punnets) cherry tomatoes, halved
  • 1 cup small fresh continental parsley leaves, washed, dried
  • 100g (1 cup) good-quality walnut halves, roughly chopped
  • Salt & freshly ground black pepper


  • Step 1
    To make the dressing, place the egg yolks, lemon juice, mustard, anchovies and garlic in the bowl of a food processor and process to combine. With the motor running, gradually add the oil in a thin, steady stream until well combined and the mixture thickens slightly. Transfer to an airtight container. Taste and season with salt and pepper. Place in the fridge until required.
  • Step 2
    Place the turkey fillets in a large deep frying pan. Add the wine, peppercorns, bouquet garni and enough cold water to cover the turkey completely. Cover and bring to the boil over high heat.
  • Step 3
    Uncover the pan and immediately reduce heat to low. When the liquid is gently simmering (bubbles will occasionally rise to the surface), cook, uncovered, for 20-25 minutes or until just cooked through (the juices will run clear when a skewer is inserted in the thickest part of the turkey). Use a slotted spoon to transfer the turkey to a plate and set aside until cooled.
  • Step 4
    To serve, thinly slice the turkey across the grain. Combine the turkey, watercress, tomatoes, parsley and walnuts in a serving bowl or on a platter. Drizzle with two-thirds of the dressing. Season with salt and pepper, and serve immediately.
