Ingredients

  • 4 beurre bosc pears
  • 1 litre (4 cups) water
  • 1 cup (220g) caster sugar
  • 1 vanilla bean, split lengthways
  • 3 tablespoons cocoa powder

Method

  • Step 1
    Remove the core from 4 beurre bosc pears, leaving stem intact, then peel.
  • Step 2
    Place 1 litre (4 cups) water, 1 cup (220g) caster sugar and 1 vanilla bean, split lengthways in a saucepan. Stir over low heat until sugar dissolves. Bring to boil. Add pears in a layer and reduce to medium-low. Simmer, turning occasionally for 15 minutes. Transfer to dish and cover.
  • Step 3
    Place 1 cup (250ml) of pear cooking liquid in saucepan and whisk in 3 tablespoons cocoa powder. Bring to boil. Reduce heat to medium and simmer for 3-5 minutes. Serve drizzled over pears.
