Ingredients

  • 2 tablespoons olive oil
  • 1 medium white onion, roughly chopped
  • 1 teaspoon ground turmeric
  • 2 cinnamon sticks
  • 500g (2 1/2 cups) basmati rice, rinsed, drained
  • 1L (4 cups) Massel vegetable liquid stock
  • 300g can chickpeas, drained
  • 75g (1/2 cup) dried apricots (halves)
  • Salt & ground black pepper, to taste
  • 2 medium ripe tomatoes, diced
  • 1 1/2 tablespoons fresh mint, roughly chopped

Method

  • Step 1
    Heat the olive oil in a large heavy-based saucepan over medium heat. Add the onion and cook for 3 minutes or until soft. Stir in the turmeric and cinnamon sticks and cook for 1 minute. Add the rice and cook, stirring constantly, for 1-2 minutes or until rice is well coated with oil. Stir in the stock, chickpeas, apricots and salt and pepper to taste.
  • Step 2
    Bring to the boil over high heat, stirring occasionally Cover the pan with a fight-fitting lid, reduce heat to low and simmer for 9-10 minutes or until rice is tender. (See microwave tip.) Stir in the tomatoes.
  • Step 3
    Remove the cinnamon sticks and serve the pilaf sprinkled with mint.
