  • 1 tablespoon lemon juice
  • 1/4 cup sweet chilli sauce
  • 2 tablespoons kecap manis
  • 2cm piece fresh ginger, peeled, finely grated
  • 4 (150g each) chicken breast fillets, trimmed
  • 1/3 cup plain flour
  • 2 tablespoons peanut oil
  • 1/2 x 250g punnet cherry tomatoes, quartered
  • 1 Lebanese cucumber, deseeded, sliced
  • 1/4 cup small fresh mint leaves
  • Steamed jasmine rice, to serve


  • Step 1
    Combine lemon juice, sweet chilli sauce, kecap manis and ginger in a ceramic bowl. Add chicken. Turn to coat. Cover. Refrigerate for 3 hours, if time permits.
  • Step 2
    Place flour on a plate. Drain chicken, reserving marinade. Lightly coat chicken in flour, shaking off excess.
  • Step 3
    Heat oil in a non-stick frying pan over medium heat. Add chicken. Cook for 4 minutes each side or until almost cooked through. Reduce heat to low. Add reserved marinade. Cover. Simmer for 10 minutes, turning occasionally, or until sauce has thickened and chicken is cooked through.
  • Step 4
    Meanwhile, combine tomato, cucumber and mint in a bowl. Serve chicken with tomato mixture and rice.
