  • 1 x 300g focaccia bread, halved, split
  • 1/4 cup cranberry and caramelised red onion chutney (Baxters brand)
  • 6 slices (150g) chargrilled sweet potato
  • 60g goat’s cheese, thinly sliced
  • 1/4 cup macadamias, chopped
  • 1/3 cup basil leaves


  • Step 1
    Preheat sandwich press. Spread focaccia bases with chutney. Top with sweet potato, cheese, macadamias and basil. Season with salt and pepper.

    Sandwich with focaccia tops and place in sandwich press. Cook for 4 to 5 minutes or until toasted and heated through. Serve.
